Olympic Lifting at TCF San Rafael CrossFit

Fruit Salad w/Cinnamon

• 1 orange, peeled and chopped
• 1 apple, chopped
• Pecans or walnuts, chopped (optional)
• 1/2 tsp cinnamon
Instructions
1. Place the fruit into bowls
2. Sprinkle with the cinnamon and/or chopped nuts if desired.

Roasted Green Beans

Ingredients

1 lb green beans
1 Tbsp olive oil
1 tbsp thyme

Instructions
Chop the ends off of the beans.
Place them into a roasting pan, drizzle the olive oil and thyme

Salmon With Coconut Cream Sauce

Ingredients
about a 16 oz. salmon filet (wild caught)
3/4 shallots, diced
3 cloves garlic, mince
2 tsp. olive oil
2 T fresh basil, chopped
zest from one lemon
fresh lemon juice, from one lemon
1/2 C low fat coconut milk
Instructions
1. Preheat oven to 350 degrees.
