Bison Chili

1 TBS used olive oil
1 3/4 lbs ground bison or grass fed beef
1/2 onion, chopped
2 1/2 cups chopped celery
2 cloves garlic
1 12 oz jar salsa….of course you could make that fresh if you want
1 8 oz can of tomatoes
2 tsp cumin
2 tsp chili powder
2 tsp thyme leaves
2 tsp sea salt

Roasted Asparagus

1 bunch asparagus
1 Tbsp olive oil
2 tsp thyme

Instructions
Remove the tough ends off of the asparagus.
Place in a roasting pan
Drizzle the oil and thyme over the asparagus and toss together until well coated.
Bake at 400 degrees for 10 minutes, then reduce the heat to 250 for 15 more minutes.

Taco Salad

10 oz lean ground beef or turkey
1 pkg. taco seasoning
1/4 c. water
1/2 c. chopped onion
1 tomato
2 c. chopped lettuce
1 can sliced olives
1 avocado

Instructions
Brown beef or turkey in pan on the oven. Add taco seasoning, water, and chopped onion to the meat once it is browned. Let simmer for 5 min.

We all need a drink, especially during the Holidays!

Spicy Broccoli

Wash and cut broccoli crowns off stem
heat 1 TBLS of sesame oil (use hot sesame oil if you like spicy)
add broccoli, season with garlic, ginger, red pepper flakes and a dash of Bragg Liquid Aminos
cook until desired broccoli firmness is obtained.

Yum-Yum Salad

Place butter lettuce, cucumber, edamame, avocado in a large bowl, add roasted pine nuts and a sprinkle of goat cheese to the top, now your have a yum-yum salad!
For true Paleo, omit the goat cheese (not so yum-yum)
